Yeah, I found that really anything you could do to get Hermione and Snape together had to be stretching at least one part of canon a whooole lot. (And how I loathed those fics that made Harry and Ron idiotic lumps so Hermione didn't have to deal with them. Or killed Ron, or made him abusive. Or a womanizer who didn't actually care about Hermione anyway. I never did figure out how anybody came to that conclusion... maybe those were fics written early on in the series.)
I think the main reason I've gotten away from fanfic is that I've become a canon nazi. Somehow or other, now that JKR's given us the canon pairings and ending and all (whether I approve or not), I just don't really care to read anything else. But I do agree about plausibility... that's what makes really good fanfic good. I adore fic that explores some overlooked aspect of canon so well that you think it's better than JKR could have possibly written it.
Also, I think my taste got a bit more, er, refined over the years I read fic... Heck, I used to review every fic I read, even the most horrible dreck on ff.net, and I thought the Draco trilogy was awesome. Not so much, anymore. ; )
