Somehow or other, now that JKR's given us the canon pairings and ending and all (whether I approve or not), I just don't really care to read anything else. But I do agree about plausibility... that's what makes really good fanfic good. I adore fic that explores some overlooked aspect of canon so well that you think it's better than JKR could have possibly written it.
Also, I think my taste got a bit more, er, refined over the years I read fic... Heck, I used to review every fic I read, even the most horrible dreck on ff.net, and I thought the Draco trilogy was awesome. Not so much, anymore. ; )

Someone once told me that since I started out with Severus/Sirius, my tastes were already "refined" and it was no wonder that I didn't like Severus/Hermione, since most people went the other direction. ;)
I think I started relatively late in life, which may have a lot to do with it. Many of the horrors in fandom are perpetrated by teenagers who later look at back at themselves and go OMG WTF. (I certainly have some OMG WTF original fiction sitting around, even from as old as ~23.) Me, I was almost 29 already when I leapt into HP fandom last year.
OTOH I sometimes run across people whose writing is very impressive that I then am slightly sheepishly boggled to find out are, in fact, teenagers (albeit older ones, ca. 18-19).
